Mozzarella and Basil Bruschetta

It's never hard to find something to do with fresh Homemade Mozzarella. Here I'm making Bruschetta, a simple snack that only tastes complex. Start with a hearty slice of homemade Italian bread, drizzled with olive oil, then a layer of sliced tomatoes. Sprinkle with a light grind of fresh sea salt and black pepper followed by a pinch or two of oregano and basil. Top with homemade fresh mozzarella cheese, and another dash of basil, if you have fresh basil leaves, use that. Mine are still not ready to be picked yet, so I had to use dried. Then bake in a 400°F oven for about 12 minutes or until desired "doneness" is reached. I know doneness is a term normally reserved for gauging how thoroughly cooked a cut of meat is. But I think it's a versatile word. Anyway, the best part about this (besides the taste) is that this is almost completely homemade! I didn't grow the tomatoes myself, but they are locally grown. So, close enough. This very tasty and simple treat is a must try!
