Cinnamon Raisin Bread

Tonight I wanted to make something special for Donatella as she is not feeling all too great. She loves cinnamon raisin bagels, and since we are fresh out of those, I quickly made up a cinnamon raisin bread recipe for my bread machine that I hoped would suffice. And it did! It more than met with her approval, which means I get to share it with you!

Note: Makes a 1 1/2 Pound Loaf
Special Tools or Equipment Needed: Bread Machine


Ingredients:
  • 1 Cup Cold Water
  • 1 Cup Raisins
  • 2 Tablespoons Butter, Softened
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons White Sugar
  • 1 1⁄2 Teaspoons Salt
  • 1 1/2 Teaspoons Cinnamon
  • 3 Cups Bread Flour
  • 2 1⁄2 Teaspoons Instant Bread Machine Yeast

Directions:

  1. First thing you want to do is soak your raisins in the cold for about 5 minutes to rehydrate a little bit, this also adds a little of the raisins sweetness to the water.
  2. Dump the raisins and water into your bread makers removable pan. Then add the rest of the ingredients in the order listed, unless otherwise stated in your bread machines instructions.
  3. Place your bread pan back into the machine, make sure everything is secure, and close the lid.
  4. Set the Loaf Size Indicator for a 1 1/2 Pound Loaf
  5. Set the Loaf Type Setting to the Sweet Bread setting
  6. If your machine has a setting to adjust the crusts darkness, I suggest putting it on the Light setting.
  7. Press Start and wait for the bread machine to work it's magic!
  8. Once the bread is done, be sure to remove it to a cooling rack and allow to cool for at least an hour before slicing.
